It’s been a little over a year and a half since Josh and I married. For our honeymoon we wanted to go some where fun, different, and exciting. We decided on Budapest because, well, George Ezra inspired us!
During our stay we found a fun market where we found loads of people queuing up for an incredible dish called “Töltött Káposzta.” We decided to give it a try and we were not disappointed!
“Töltött Káposzta” is originally a cabbage roll filled with rice, minced pork and beef. Being inspired by this dish, I created something that I hope you enjoy!

Recipe Includes: Celery Rice
1 whole Sweetheart cabbage
2 chicken breast
1 courgette sliced
salt and pepper
2 garlic cloves
1 teaspoon salt
1/2 onion diced
2 teaspoons ancho Chili paste
4 celery sticks sliced
2 cups basmati rice
Step 1: Boil chicken breast for 20 minutes. Add a heaping teaspoon of salt to the water
Step 2: Put all sauce ingredients in blender and whiz for sauce( For those of you in England, ancho chili paste can be found at your local Waitrose)
Step 3: Pour your sauce into a saucepan and simmer on low for 15 min, stirring every few minutes. Put aside once done
Step 4: Cut bottom end off of the cabbage and seperate the leaves. This will later become your wraps
Step 5: Arrange cabbage one on top of the other in a stew pot and pour boiling water over leaves. Place lid on and let boil for 8 minutes on a medium heat. Strain once done and leave to cool
Step 6: Once chicken is cooked through, shred with a fork and put aside until the next step
Step 7: Heat a teaspoon of oil in a frying pan and add the corgette. Cook for 3 minutes and add shredded chicken. Season with chicken seasoning (this is key to give your cabbage rolls flavour).
Step 8: Preheat your oven to 180 C. Meanwhile, lay your cabbage leaves flat on either a chopping board or clean, flat surface. Place a spoonful of your corgette and chicken filling close to the bottom end of the leaf and roll towards the top. Fold in the sides of the cabbage as you roll(this will stop your filling from coming out). Continue this process until you have finished filling all the cabbage leaves. Pour sauce over your rolls once finished and bake in oven for 7 minutes
Celery Rice (Steps for the perfect rice)
Step 1: Heat 1 tablespoon of oil in large sauce pan. Add 2 cups of basmati rice and fry for 4-5 min(continuously stir rice to avoid burning)
Step 2: Add celery and season with salt. Add 750 ml boiling water and cover for 10 min on low heat. Tip: If rice has not completely softened after 10 min add about 500 ml water, move rice to avoid burning and cover and let sit for 3 min more
